This coffee is known as the most expensive coffee in the world. From the Indonesian island of Sumatra, there is an animal called Paradoxurus, also known as Luwak. These small marsupials know when to eat coffee cherries when they are the ripest. The beans are then passed through their digestive system and come out intact. The enzymes in their stomach ferment the beans for about 1-2 days. After cleaning and roasting these beans, we notice a less bitter taste while having an increased caramel-finish.
